Note: As of late 2021, this blog is still intended to be revisited and worked on further. It will be updated, as well as built upon, hopefully fairly soon.
The intention of this blog is both to compile a comprehensive list of the survivors and victims of Thanos' "Snap" and to count the statistics for how close it is to the intended 50:50 balance.
So as not to skew the statistics, characters such as those who arrived post-Snap will not be included. So, characters like Keller will not appear on this list, at least for now, since they are also not relevant to the statistics: if Keller specifically had instead been Snapped, then there would instead be another new agent in his place in Marvel's Agents of S.H.I.E.L.D.. We only know about his existence because he was a Snap survivor. That new role would always by default have to be one of the other 4 billion Snap survivors, so it doesn't matter. This goes for the names on the wall in San Francisco in Avengers: Endgame. It goes for the new agents and Deke Shaw's team in Marvel's Agents of S.H.I.E.L.D.: Season 6, as well as Izel and Sarge and his team (the show's villains in Season 6 would, again, always have to by default be survivors, when perhaps it would have been other villains had those people survived). It also goes for characters in Spider-Man: Far from Home like Sue Lorman (a role that would always have by default gone to one of the hundreds of students who was Snapped) and Brad Davis (a role that would always have by default gone to one of the hundreds of students who survived).
So, in general, this list is for characters who have been followed through either side of the Snap and not just introduced afterward. I am, however, including Amanda Campbell from Marvel's Agents of S.H.I.E.L.D.: Season 6 and Jason Ionello's brother and Roger Harrington's wife from Spider-Man: Far from Home, as these are not characters who are defined from inception to fill the purpose of "to be a character who has survived/been killed by the Snap", but rather as just characters who happen to have had implied/stated the fact that they survived/were killed by the Snap.

Novel vs. Film[]
Marvel's Avengers: Infinity War: The Cosmic Quest Volume Two: Aftermath by Brandon T. Snider is all but confirmed canon, but not quite. It states Erik Selvig to be alive. Avengers: Endgame shows him among the faces of the dead characters, though technically only classifies him as "missing" and is thus compatible with the novel, which is pretty much confirmed canon: Selvig survived.

Angela Bassett vs. Character Poster & Film[]
Angela Bassett stated that Shuri survived. The film puts her face among the dead. While like Selvig, she is merely labelled "missing", unlike Selvig there is no way the Avengers would be unsure of her fate, and Selvig was confirmed by a (pretty much confirmed) canon novel while Shuri was merely a passing comment by Angela Bassett, easily overruled. As well as this, her character poster being discoloured implies she died.
