I agree with you. Hayward seems to be a little paranoid about ‘enhanced’ individuals (it’s the term from Agent’s of SHIELD to describe people with powers) considering he tried to kill Wanda without telling Monica. It seems likely that he’ll make some sort of weapon to deal with them.
If you just want to learn their origin, then Avengers Age of Ultron. It is literally their debut movie into the MCU.

I’m happy they did it. It means that the Avengers wouldn’t have to resurrect him with any complicated methods to start his series. This is simple and it lets him be independent and not let his actions impact the rest of the MCU.
I hope we see Luke Cage again. The cliffhanger was incredible and I can’t wait to see who would stand against him. Would it be a brand new enemy? Or would it be a former ally?
I hope they do the original Sinister Six from the comics. But with Green Goblin replacing Sandman. Now that would be awesome.
My favourite Defenders moment was definitely when Daredevil fought Iron Fist. It was so intense. The fight to prove whose the better martial artist: the guy who was trained by monks or the blind man who was trained by the Chaste.

Captain America put the Soul Stone back in. Vormir and 2014 Thanos died, so I suppose he has to still be there.
Let’s hope he gets to face off against as many enemies as possible. Here’s to another five years
