You all keep saying you chose one because the the other did something wrong or the other way around, but that's not the point of the question. It isn't about choosing which hero you like more, it's about what you think it's the right cause. Team Cap fought because they didn't agree with the Accords, which would basicaly turn them into government assets. Team Iron Man defended that the best way to keep peace was signing the accords. Usually I'm more up for Iron Man, but I agree with Cap in this, becoming government tools wouldn't be the smartest choice.

Because it was before Sylvie killed Kang's variant (can't remember the name) which caused the TVA to be destroyed and multiverse to branch out. The What If...? series happen after Loki, so that's why Ultron could see The Watcher (or even exist). Thanos could have never seen him.
