Here are the deleted scenes from Black Widow. The interesting scene is an extended bike chase through Budapest. Yelena says that Nat has driven them into a cage and Nat replies that the gate wasn’t there 8 years ago. That means the Budapest mission was in 2008

Some deleted scenes are cannon, like bruce saying in Avengers that he tried to shoot himself and hulk spit it out. this was a a ref to a deleted scene from the incredible hulk
Sam might be rounding and also counting October 2023 as well.
They do this a lot especially with Steve, "70 years in the ice" rounded from 66 years

There’s a video from the crew of FatWS, celebrating Buckys 107th birthday. That means they’re obviously aware that his 107th birthday would be March 10th 2024. So it would be strange them posting this video for fun to then let the 106 in Ep.1 be a continuity error. So maybe the first episode is set in the first week of March 2024 just before Bucky’s birthday. They said in an interview that they shot the video on the last day of shooting in Prague. The fact they’ve acknowledged he turns 107 means they will prob have a passing mention of his birthday in the show itself. The G20 summit in set photos has 2023 yes, but until the show gets to those scenes we don’t know the narrative reason behind those posters yet. Most prob it was set for 2023 but then everyone came back and they had to postpone it until a few months with everyone just popping back to life.

2019 Fitz and Simmons go to space with Enoch to start their plan, their daughter Alya is born. They live to the year 2023 in Theta Sepentis. They then travel back to 2019 when they originally left.
2023 Fitz and Simmons arrive back in 2019 to save the team in the temple, while their 2019 selves are heading to space with Enoch. Fitz and Alya stay in 2019 in the Zephyr pod. 2023 Simmons travels with the team to 1931 and they create an offshoot timeline till 1983.
Using the quantum realm 2023 Fitz travels to the off shoot timeline and retrieves the team to take them back to their original timeline in 2019. While they are in space The 2019 and 2023 versions of Fitz and Simmons and the rest of the 2019 team are running about on Earth. They then all go down to save their original selves to complete the time loop.
Director Hayward talks about how hard it was to keep the lights on during the 5 year snap. So we know that S.W.O.R.D. was obviously active during this time as well as other military agencies. These agencies have satellites and drone surveillance, inc Starks own satellites.
The Avengers HQ is far from the big cities but there must be some people living nearby. When Thanos's ship appeared in the air and blew the HQ to hell somebody must have noticed or at least heard it. When reports came in you can bet S.W.O.R.D. was monitoring the situation to find out what was going on, and prob got some debrief of the situation from the Avengers themselves.
Considering Monica, Darcy and Woo are discussing this 3 weeks later is not farfetched that they knew some details from the battle. Even the general public knew what Tony Stark did to save them with banners and murals in his honour all around the world in far from home 8 months later.
Steve Rogers himself mentions Thanos in the therapy meetings. So the Avengers told the world what happened after Thanos snapped his fingers. Those who survived in the 5 years knew what happened to the dusted.
