I don’t think it’s a production decision, more of a creative one.
My only guess is because the Rings are more significant than they are in the comics
Oh yeah like how Ms marvel has rings too and many are guessing they connect to the multiverse and Kang
It could also be to differentiate them from the Infinity Stones. We already had the "powerful, multi-coloured things on person's knuckles" gimmick before

not entirely sure, but movie's makers might have explained the rings.
I don’t remember the exact reasoning, but they did explain why they changed it in Marvel Studios Assembled: The Making of Shang-Chi and the Legend of the Ten Rings.
