Some examples off the top of my head, by no means exhaustive:
Butch Cassidy and the Sundance Kid is referenced in Agents of S.H.I.E.L.D. and What If...?, despite Robert Redford.
Game of Thrones is referenced in Thor: The Dark World Prelude, Luke Cage, and Jessica Jones, despite Richard Madden, Peter Dinklage, Kit Harington, Jessica Henwick, Finn Jones, and soon to be Emilia Clarke. Luke is talking about the show when literally his friends Danny and Colleen are in it.
Luke Cage references "Ripley in Aliens", when literally the year before he'd gone up against Sigourney Weaver.
Jennifer Walters references the iconic Anthony Hopkins performance as Hannibal Lecter, despite Anthony Hopkins.
In Thor, Xena is referenced, but Lucy Lawless is later in AoS.
In Love and Thunder, they reference both Event Horizon and Interstellar, then minutes later show Sam Neill (star of Event Horizon) and Matt Damon (star of Interstellar).
In Wakanda Forever, Riri references Indiana Jones, despite Harrison Ford coming up.
Tony references Lebowski in Endgame, despite having faced Jeff Bridges himself.
There have been references to all three Star Wars trilogies, despite Harrison Ford, Natalie Portman, Samuel L. Jackson, Oscar Isaac, Jessica Henwick.
Photos of Richard Madden, Peter Dinklage, Chadwick Boseman, Liv Tyler, Daniel Bruhl, and Gwyneth Paltrow have been shown on background magazines and arcade machines in TV shows. Miley Cyrus has been mentioned to exist.
The list goes on.
Maybe James Gunn is concerned of this, as Chris Pratt asked him to have Star-Lord remark that Ego looks like Kurt Russell but Gunn said no.
Not a plot hole. Just like recasting, they aren’t plot holes and same goes for actors playing two different roles in same franchise.
I think @X9 The Android ’s theory is the best one, saying that the actors in universe look different. Problem solved!

If it was then it would question why Jane Foster looks like Padme
Why Gemma Chan, Michelle Yeoh and a bunch of other Marvel actors had played two characters
Or why Harrison Ford's Thaddeus Ross will look like Han Solo and Indiana Jones
Or why Everett K. Ross looks like Bilbo Baggins but taller
The list goes on so not a plot hole at all

Starwars exists in the DC Universe. Not sure about Marvel.
@ZayyT07 Star Wars exist in the MCU and Marvel universe, if it doesn't then Spidey wouldn't know what an AT-AT was in Civil War and Peter even had a Lego Set of Star Wars in his movies. Again, the best way to explain is that Nick Fury and Samuel L. Jackson are Doppelgängers as well as the rest of the actors and the characters they played in.
