Even with Doctor Strange and Wong saying that, I always believed magic, even "real magic" to be science we don't understand yet. Given time, scientists of the MCU could comprehend the spells and magic of the Mystic Arts with equations and physics.

I think some magic in the MCU is science unknown yet (particularly Asgardian magic, as mentioned several times throughout the films), though stuff like Doctor Strange is magic. Still, allusions to drawing power may mean something in your view.

It is the manipulation of energy harnessed from dimensions and universes beyond our own. In essence. Something not understood yet being used in one world where it would be understood in others.

It's all just semantics anyway. Science is just a means of understanding the world. So if there's a system of learning and understanding magic, then it would technically be "The Science of Magic." You could even say "Doctor Strange has got Magic down to a science."

When most people say "science" they really mean advanced machinery or technology, as opposed to a traditional etherial unseen fairy tale power.

Quite frankly, in fiction, I think Magic -- Fairy Tale Magic -- should exist as something separate from "science" or technology. Because that's the whole point of the Fantasy genre. It's fantasy. That doesn't mean it can't be understood or studied, but if all magic in fiction is "all just science in disguise," that's just another way of saying there's no such thing as magic, even in fiction -- which defeats the point of Fantasy. It defeats the point of the concept of magic in the first place.

That's why I roll my eyes whenever people or characters say "Magic is just science that you don't understand." It's not that it can't be, in some stories. But if that's the case in every story, then it would erase the Fantasy genre entirely, as it would mean that all Fantasy stories are really just Science Fiction stories.

I think we should have both Science Fiction and Fantasy.

If science is exact, magic should be fickle. If magic follows rules and is consistent, then it could be a science.

Magic defies the rules of physics, that would be the distinction. The key difference is that magic is sometimes characterized as being a set of practice in which the very nature of the practice sometimes has a mind of its own, not always going as planned, not always able to be replicated with tried and true methods.
