Question about ultron attack on party Thor universe

So at the end of What If Thor was an only child, Watcher was surprised to see Ultron attack the Thor universe. And in What if Ultron won, we learn about the Watcher who made ultron aware of the multiverse.

my question is why watcher is surprised to see ultron in episode 7 if he fights ultron who is trying to destroy the multiverse, and if he hasn't met Ultron yet, why does ultron find out about the multiverse in episode 7 ?

I assume The Watcher investigates the universe where Ultron came from and the time before he attacked the Multiverse. Instead of figuring out its origins, he messes up and makes Ultron aware of the Multiverse.

but if that's not the reason, I don't understand at all

It really is @HYDRA Agent . I wouldn’t care if it was completely non-canon, but apparently it is in the multiverse. There’s no multiverse I’m accepting as canon where T’Challa can just talk Thanos out of his life’s mission. Or where Bucky quips after cutting Steve’s body in half.

One of the parts I hated the most was when Bucky fell of the train but Peggy rescued him and she said “you almost ripped my arm off”. It wasn’t very funny, and super disrespectful to other MCU movies

I also noticed that in episode 8 and episode 9, we never actually see Ultron himself going to Party Thor's universe ._.XD

The watcher has the ability of time travel, so he traveled back to the ultron's universe. I think about it a lot and I find it a lot of filling that "plot hole". If you read about it, the watcher does have time travel capabilities. This thor thing may have been a past story that PAST watcher didn't know about that the future watcher created. It is almost like a time loop.
