I'll be honest, I didn't see anything in the episodes that suggested when exactly the agents branched off into the new timeline, in fact, it doesn't make sense to me why Fitz would say they BRANCHED OFF into the new timeline if they were always in that timeline since the beginning.

"You went back in time, and then you branched off" meaning "you went back to the past of Earth-199999 and then branched off into a new timeline". The split could still be in 1931, but not at the exact moment they arrived.

But that's just how i saw it, I hope someone involved with the show says something. I won't argue with anyone :)

is it a mistake that when Coulson is driving Lola in the final scene we can see the Triskelion in the background in 2020?

No, this is not a mistake. In 2020, Triskelion was rebuilt and became S.H.I.E.L.D.'s headquarters once again after the War Against the Chronicoms under Alphonso Mackenzie's directorship.

None of the medias prior to the last shot of the series indicated a rebuild. Last we know about it was in a deleted scene in Homecoing which said that they were still cleaning the wreckage in 2016. So it weirded me out too.
